Study on Antioxidant Effects of Rice Peptide Chelate in Vitro
Use rice peptide,calcium chloride,zinc sulfate,and ferrous sulfate as raw materials to prepare rice peptide calcium,zinc,and iron chelates through chelation processes.The molecular weight distribution and amino acid composition of rice peptides were conducted,and the antioxidant function in vitro of rice peptides and their chelates was compared using ABTS,DPPH radical scavenging experiments,and reducing power experiments.The results showed that the molecular weight distribution range of rice peptides was mainly between 200 Da and 2 000 Da,and the proportion of rice peptides with molecular weight less than 2 000 Da to the total peptide weight was about 82.02%.The highest amino acid content of rice peptides was glutamic acid.Both rice peptides and their chelates exhibited good antioxidant properties in vitro,and increased with their concentration.Within a certain concentration range,the ability of rice peptide calcium zinc iron chelates to scavenge DPPH free radicals,ABTS free radicals,and reducing power was improved compared to rice peptides.The infrared spectrum detection results indicated that after the chelation of rice peptide with calcium,zinc,and iron,the functional groups in rice peptide successfully were bound with metal ions,forming new and different structures.
