The Utilization of the Rice Viscosity Curve to Assess the Suitability of Raw Materials for Puffed Rice Cracker Production
Use 18 varieties of rice as materials to investigate the influence of rice viscosity curve on puffing effect of rice crackers.Use puffing effect as output,and rice gelatinization characteristic values as input,and create a predictive model for the puffing effect of rice crackers by decision tree algorithm.The results find that pasting temperature,minimum viscosity,final viscosity,and peak viscosity are key indicators on the puffing effect.This decision tree model can predict the puffing effect of rice crackers successful,offering a theoretical foundation for a swift screening of raw rice materials in the manufacturing of puffed rice crackers.
