RVA糊化曲线在膨化米饼原料大米筛选中的应用

为探究大米RVA糊化特征值对米饼膨化效果的影响,以18个品种的大米为原料制备高温膨化米饼,通过以膨化效果为评价指标,以大米糊化特征值为考察因素,采用决策树算法构建可用于预测米饼膨化效果的模型.研究结果筛选出了4个对米饼膨化效果有重要影响的指标,依次为糊化温度>最低黏度>最终黏度>峰值黏度.利用这4个指标所建立的决策树模型可有效预测米饼的膨化效果,为膨化米饼生产中原料大米的快速筛选提供了理论支持.
The Utilization of the Rice Viscosity Curve to Assess the Suitability of Raw Materials for Puffed Rice Cracker Production
Use 18 varieties of rice as materials to investigate the influence of rice viscosity curve on puffing effect of rice crackers.Use puffing effect as output,and rice gelatinization characteristic values as input,and create a predictive model for the puffing effect of rice crackers by decision tree algorithm.The results find that pasting temperature,minimum viscosity,final viscosity,and peak viscosity are key indicators on the puffing effect.This decision tree model can predict the puffing effect of rice crackers successful,offering a theoretical foundation for a swift screening of raw rice materials in the manufacturing of puffed rice crackers.
