青楷槭树叶成分分析及其提取物的抗氧化能力研究

以青楷槭树叶为原料,研究其一般成分含量、游离糖含量及青楷槭树叶提取物的抗氧化能力.以DPPH自由基、ABTS+自由基、超氧阴离子的清除能力和铁离子还原能力为评价指标测定青楷槭树叶热水提取物(ATWE)和青楷槭树叶乙醇提取物(ATEE)的抗氧化能力.结果表明:青楷槭树叶水分为13.24%,粗灰分为4.73%,粗脂肪为5.41%,蛋白质为19.77%,碳水化合物为56.85%,总膳食纤维为49.57%;青楷槭树叶中检测出3种游离糖,其中果糖、蔗糖、葡萄糖的含量分别为5.13%,1.38%和3.45%,未检测出麦芽糖和乳糖.结果表明,ATEE和ATWE均具有良好的自由基清除及还原能力,且在总体上ATEE抗氧化能力优于ATWE.
Compositional Analysis of Leaves of Maple(Acer tegmentosum Maxim.)and Study on Antioxidant Capacity of Its Extracts
The general constituent content,free sugar content and antioxidant capacity study of the leaf extracts of Acer tegmentosum Maxim.were investigated using the leaves of Acer tegmentosum Maxim.as raw material.The antioxidant capacity of ATWE and ATEE was determined using DPPH radicals,ABTS+radicals,scavenging capacity of superoxide anion and ferric ion reducing capacity as evaluation indexes.The results showed that the moisture of the leaves of Acer tegmentosum Maxim.was 13.24%,crude ash content was 4.73%,crude fat content was 5.41%,protein content was 19.77%,carbohydrate content was 56.85%,and the total dietary fiber content was 49.57%;Three kinds of free sugars were detected in the leaves of Acer tegmentosum Maxim.,including fructose,sucrose,and glucose with 5.13%,1.38%and 3.45%,and maltose and lactose were not detected.The results showed that both ATEE and ATWE possessed good free radical scavenging and reducing ability,and in general,the antioxidant capacity of ATEE was better than that of ATWE.
