基于GC-MS的霞多丽葡萄酒及蒸馏酒香气成分分析

采用搅拌棒萃取法-气相色谱-质谱联用技术,对霞多丽葡萄酒和霞多丽蒸馏酒的香气成分进行分析.结果表明,霞多丽葡萄酒和霞多丽蒸馏酒中香气成分总数接近,但是蒸馏酒中香气浓度更高.其中:霞多丽葡萄酒中酯类26种,酯类总含量359.35 mg/L;霞多丽蒸馏酒中香气成分46种,其中酯类数量最多,有17种,总含量1 102.65 mg/L,是霞多丽葡萄酒中的3倍.通过香气活性值(OAV)的计算发现,对霞多丽蒸馏酒香气贡献较大的香气成分有9种,分别是大马士酮、丁酸乙酯、乙酸异戊酯、正己酸乙酯、辛酸乙酯、癸酸乙酯、正癸酸、月桂酸、1,2-二氢-1,1,6-三甲基萘,这些物质会带给霞多丽蒸馏酒丰富的花香和水果香.
Analysis of Aroma Components of Chardonnay Wine and Chardonnay Distilled Spirit based on GC-MS
The aroma components of Chardonnay wine and Chardonnay distilled spirit were analyzed by stirring bar sorptive extraction-gas chromatography-mass spectrometry(SBSE-GC-MS).The results showed that the total amount of aroma components in Chardonnay wine and Chardonnay distilled spirit were so close,but the concentration of aroma components in distilled spirit was higher.Among them,there were 26 kinds of esters in Chardonnay wine,and the total content of esters was 359.35 mg/L.There were 46 aroma components in Chardonnay distilled spirit,among which 17 were ester and was the most aroma component with a total content of 1 102.65 mg/L,which was three times of which in Chardonnay wine.According to the odor activity value(OAV),nine compounds were considered as important aroma compounds in Chardonnay distilled spirit,these compounds were β-damascenone,ethyl butyrate,isoamyl acetate,ethyl caproate,ethyl caprylate,ethyl caprate,decanoic acid,lauric acid,1,2-dihydro-l,1,6-trimethyl,and hese compounds could present rich floral and fruity aromas in Chardonnay distilled spirit.
