胭脂萝卜花色苷活性智能指示膜的制备及其特性分析

摘要
基于花青素和生物可降解材料的智能指示膜因其能够可视化反应食品质量或新鲜度而受到广泛关注.此试验以羧甲基纤维素钠(carboxymethyl-cellulose sodium,CMC-Na)和魔芋葡甘露聚糖(konjac glucomannan,KGM)为成膜基材,以胭脂萝卜花色苷(ANS)作为指示剂,以茶多酚(tea polyphenols,TP)作为抗氧化剂,制备活性智能指示膜,比较5种膜(CMC+KGM,CMC+KGM+ANS,CMC+KGM+ANS+0.02%TP,CMC+KGM+ANS+0.1%TP和CMC+KGM+ANS+0.2%TP)的力学性能、透气性、透光率、稳定性和抗氧化活性.结果表明,胭脂萝卜花色苷对pH响应好,可作为膜的指示剂,茶多酚添加增加膜的抗拉伸强度,改善膜的稳定性,同时显著增加膜的抗氧化活性.
Abstract
Smart indicator membranes based on anthocyanins and biodegradable materials have received much attention for their ability to visually reflect food quality or freshness.In this experiment,carboxymethyl-cellulose sodium(CMC-Na)and konjac glucomannan(KGM)were used as film substrates,and carmine radish anthocyanins(ANS)was used as indicator.Intelligent indicator membranes were prepared using tea polyphenols(TP)as antioxidants.The mechanical properties,air permeability,light transmittance,color stability,and antioxidant activity of five kinds of membranes including CMC+KGM,CMC+KGM+ANS,CMC+KGM+ANS+0.02%TP,CMC+KGM+ANS+0.1%TP,and CMC+KGM+ANS+0.2%TP were compared.The results showed ANS had good pH response and could be used as an indicator of the membrane.The addition of tea polyphenols increased the tensile strength,improved the color stability,and significantly increased the antioxidant activity of the film.
