Preparation and Characterization of Intelligent Indicator Membrane Incorporating Carmine Radish Anthocyanins
Smart indicator membranes based on anthocyanins and biodegradable materials have received much attention for their ability to visually reflect food quality or freshness.In this experiment,carboxymethyl-cellulose sodium(CMC-Na)and konjac glucomannan(KGM)were used as film substrates,and carmine radish anthocyanins(ANS)was used as indicator.Intelligent indicator membranes were prepared using tea polyphenols(TP)as antioxidants.The mechanical properties,air permeability,light transmittance,color stability,and antioxidant activity of five kinds of membranes including CMC+KGM,CMC+KGM+ANS,CMC+KGM+ANS+0.02%TP,CMC+KGM+ANS+0.1%TP,and CMC+KGM+ANS+0.2%TP were compared.The results showed ANS had good pH response and could be used as an indicator of the membrane.The addition of tea polyphenols increased the tensile strength,improved the color stability,and significantly increased the antioxidant activity of the film.
