Single strain fermented curd has problems such as incomplete enzyme system and single flavour.In this study,Trichoderma M-T and Trichoderma 40899 were used to prepare the fermenter,and the optimal fermenter formulation was determined by studying the process parameters such as the amount of water added to the fermenter,pH,the amount of strains added to the fermenter,and the ratio of strains.The optimized fermenter was used to ferment curd,and the changes of protease activity,total acid and amino acid nitrogen were determined within 72 h.The results showed that the fermenter was suitable for the fermentation of fermented curd,but it was not suitable for the fermentation of curd.The results showed that the optimum moisture addition of the fermenter was 111%of the culture substrate,the pH was 3.22,the bacterial-liquid ratio was 0.69,and the mould count in the finished fermenter was 8.35 lg(CFU/g).The protease activity of the fermenter-cultured blanks could reach 37.25 μg/g at 72 h.Compared with the total acid content during the pre-fermentation period of traditional curd,the total acid content of the fermenter-fermented curd rose slightly faster,and the content of amin acid nitrogen increased from 0.004 g/100 g at 0 h to 0.056 g/100 g at 72 h.The fermentation performance of the fermenter was good,and it provided a reference for the large-scale production of curd in the curd industry.The fermentation performance of this fermenter is good,which provides a reference for the large-scale production of curd industry.
