Determination of Three Vanillin in Rice by Liquid Chromatography-Mass Spectrometry
Establish a method for determining the content of vanillin, methyl vanillin, and ethyl vanillin in rice by liquid chromatography-mass spectrometry. The three spices have good linear relationships within the range of 5-200 ng/mL,with correlation coefficients greater than 0.99.The detection limits were 5 μg/kg,2 μg/kg and 3 μg/kg,respectively,with quantification limits of 15 μg/kg,6 μg/kg and 9 μg/kg,respectively,all lower than the national standard value. The recoveries were 96.4%-106.6%and the relative standard deviations were 0.8%-3.1%(n=6)when the calibration levels were 30,100 and 300 μg/kg.This method was easy to operate, highly sensitive, and had good repeatability, and could effectively meet the rapid determination of vanillin, methyl vanillin, and ethyl vanillin in rice. The sample determination results showed the presence of endogenous vanillin in rice.It was recommended that relevant departments adjust the corresponding national standard limit values and regulatory measures in a timely manner to avoid misjudgment.
