Analysis and Evaluation of Nutritional Components in Special Vegetables and Fruits in Huai'an
In order to fully understand the nutritional value of six characteristic vegetables and fruits in Huai'an City,Jiangsu Province,and to provide scientific basis for further rational development,the national standard method was used to determine the content of basic nutrients,vitamins and minerals in six vegetables and fruits,namely,Typha latifolia L.,Raphanus sativus,C.annuum var.Grossum,Brassica campestris L.,Fragaria ×ananassa Duch.and Raphanus sativus L.,and the principal component analysis of 10 mineral elements was carried out to establish the principal component equation and comprehensively evaluate.The results showed that among the six vegetables,Brassica campestris L.had the highest content of protein,ash,insoluble dietary fiber,Na,Ca,Mg,Fe and Zn,Raphanus sativus had the highest vitamin A content(579 mg/100 g),C.annuum var.Grossum had the highest vitamin C(1.4× 102 mg/100 g),and the most abundant K,P,Mn content was Typha latifolia L..The principal component analysis also showed that the six kinds of vegetables and fruits were ranked as Brassica campestris L.,Typha latifolia L.,Raphanus sativus L.,Fragaria ×ananassa Duch.,C.annuum var.Grossum and Raphanus sativus.It could be seen that Brassica campestris L.could be used as a supplement of Ca,Na,Mg,Fe and Zn,Typha latifolia L.could be used as a supplement of K,P and Mn,and C.annuum var.Grossum could be used as an important food to supplement vitamin C and other elements.
