摘要

为了研究扬州盐水鹅的保藏期,在4,25和37 ℃这3个温度分别模拟春、夏、秋、冬4个季节的室内温度.试验表明,在4 ℃贮藏条件下,效果最好,不仅保藏期最长,而且盐水鹅色泽、气味和形态等方面也得到最佳的保持.

Abstract

In order to study the preservation period of salt water geese in Yangzhou,the three temperatures of 4,25 and 37 ℃ were used to simulate the indoor temperature in four seasons of spring,summer,autumn and winter,respectively.The results showed that the storage condition of 4 ℃ had the best effect,not only the longest storage period,but also the best color,odor and shape of brine goose.
