Analysis of High Frequency Defects of On-Site Inspection of Quick-Frozen Prepared Dishes Production Licenses
In order to study the potential quality and safety issues in the production process of prepared dishes,this article summarizes and analyzes the defects found during the on-site technical review of the production license for prepared dishes in Xiamen from 2020 to 2023.The purpose is to identify the high-frequency defects that exist in the production process of prepared dishes in enterprises.The research results indicate that the defects in the production process of this type of product are mainly concentrated in three aspects of equipment and facility management,management system,and production site.This study provides a data basis for quality and safety monitoring of prepared dishes production,and proposes countermeasures and suggestions for production enterprises.
