Study on Food Safety Problems and Countermeasures of Soy Sauce and Vinegar from the"Penetrating"Supervision
In order to strengthen food safety supervision in rural areas,aiming at the difficult problem of how to ensure the food safety of condiments in rural areas,this paper takes Sichuan Province as an example to explore the"penetrating"supervision path,and to find out the food safety situation throughout the industrial chain,supply chain and consumption chain of condiments.Based on problem-oriented,constantly expand and dig deep into the problem and trace back to the source,and finally formulate solutions to form a closed loop.The deep-seated food safety problems of soy sauce and vinegar found in the study are systematically sorted out,including the problems of impersonating liquid sauce,changing loopholes in label,illegally adding pigment,adding acetic acid for blending,and unlicensed production etc.By tracing back,the root causes and causes of the problems are found,and the countermeasures to solve the problems are given accordingly,so as to explore and promote the shift of the focus of supervision from"treating the disease"to"preventing the disease"and from focusing on supervision to paying equal attention to supervision services.Finally,some suggestions for further research are put forward.
