The Influence of Organic Acids on the Determination of Acid Value of Oils and Fats
The effects of ascorbic acid,citric acid,tartaric acid,gallic acid,acetic acid,maleic acid and benzoic acid on the determination of plant oleic acid value were studied.Potentiometric titration method GB 5009.229-2016 for acid value in food was used to detect the influence of seven organic acids on acid value of oils and fats as petroleum ether entered the samples to be tested.The results showed that the effect of additive amount on acid value increased linearly in direct determination.The acid value measured after petroleum ether dissolution,anhydrous sodium sulfate dewatering and solvent removal ultimately reflected the amount of fat-soluble organic acids in the system.Oxidation experiments showed that organic acids such as gallic acid,tartaric acid,citric acid and ascorbic acid could slow down the change of acid value of oil.
