复合益生元润肠通便及在压片糖果中的应用

以低聚果糖为原料制备复合益生元,采用小鼠模型,对复合益生元的润肠通便效果进行研究,结果表明,不同剂量组小鼠墨汁推进率均有明显增加,小鼠首便时间缩短,其中,中、高剂量组小鼠的粪便粒数与模型对照组相比分别提高了2.1和2.2倍,粪便质量与模型对照组分别提高了2.3和2.9倍,证明复合益生元对小鼠的润肠通便效果显著,且服用期间无腹胀、腹泻等不良现象,绿色安全.以复合生元为原料制备压片糖果,对产品的配方进行优化,结果表明,在复合益生元添加量75%、赤藓糖醇添加量10%、草莓粉添加量10%、柠檬酸添加量0.3%、食用香精和硬脂酸镁添加量4.7%的条件下感官评分最优,按照国家标准要求检测压片糖果感官、理化及微生物等指标,全部合格.
The Compound Prebiotics to Moisten Bowel and Defecate and the Application in Tablet Candy
Using fructo-oligosaccharide as raw material,the compound prebiotics were prepared.The mouse model was used to study the effect of its purging and defecating effect.The results showed that the ink advancing rate of mice in different dose groups was increased significantly,the first defecation time of mice was shortened,and the number of fecal particles in mice in medium and high dose groups was increased by 2.1 and 2.2 times,respectively,compared with the model control group.The fecal weight was increased 2.3 and 2.9 times compared with the model control group,respectively,which proved that the compound prebiotics had a significant effect on moistening the intestine and defecating the mice,and there were no adverse phenomena such as abdominal distension and diarrhea during the administration,so it was green and safe.On the other hand,the compound biostime was used as raw material to prepare the pressed tablet candy,and the product formula was optimized.The results showed that the sensory score was optimal under the conditions of 75%compound prebiotics,10%erythritol,10%strawberry powder,0.2%citric acid,and 4.8%food flavor and magnesium stearate.According to the national standards,the sensory,physical and chemical and microbial indicators of the tablet candy were tested and all were qualified.
