摘要

随着经济水平的不断提升,植物蛋白的需求量日益增大.从植物来源、提取技术、植物蛋白的主要应用产品和植物蛋白在发展中存在问题进行综述,总结传统和新兴的植物蛋白提取技术的原理、特点及应用进展,为植物蛋白提取技术的快速发展提供参考依据.

Abstract

With the continuous improvement of economic level,the demand for plant protein is increasing.Overview plant sources,extraction techniques,major applications of plant protein,and the problems encountered in its development.The principles,characteristics,and application progress of traditional and emerging plant protein extraction techniques are summarized to provide a reference for the rapid development of plant protein extraction technology.
