市售肉类罐头产品现状

随着现代社会经济的不断发展,肉制品罐头种类也随着国内家庭生活水平和肉制品罐头加工与生产技术水平的提高而持续增多.为明确市售肉类罐头产品现状,对近年来在我国市场上流通的肉类罐头产品进行调研,通过对市场上肉制品罐头的品牌、净含量、配料、保质期等信息进行调研,并对调研结果进行分类汇总和对比分析,结果发现:在罐头种类方面,以调味类肉罐头的数量及种类居多;在市场占用份额方面,梅林品牌的肉罐头的市场占有率较大;在食用方法方面,大多数肉类罐头以开罐即食方式居多;在净含量方面,畜肉罐头以100~200g居多,禽肉罐头以300~400 g最多,水产罐头以100~200 g最多;在贮藏方法方面,肉类罐头以常温贮存居多;在保质期方面,大部分罐头的保质期为12~36个月,有少部分罐头保质期小于1个月.调研的开展对肉类罐头新产品开发中配方、品牌及净含量设计等具有参考价值.

With the continuous development of modem social economy,the types of canned meat products have also continued to increase with the improvement of domestic family living standards and canned meat processing and production technology.In order to clarify the current situation of canned meat products on the market,investigate the canned meat products circulating in the Chinese market in recent years,and investigate the brand,net content,ingredients,shelf life and other information of canned meat products on the market,and classify and summary and compare the research results.In terms of market share,Merlin brand canned meat has a large market share.In terms of eating methods,most canned meat is mostly eaten ready-to-eat.In terms of weight,canned livestock meat is mostly 100-200 g,canned poultry meat is 300-400 g,and canned aquatic products is 100-200 g.In terms of storage methods,canned meat is mostly stored at room temperature.In terms of shelflife,most canned food has a shelflife of 12-36 months,and a small number of canned foods have a shelflife of less than 1 month.In short,this survey has a certain reference value for the development of new canned meat products in terms of formula,brand and weight design.
