Evaluation of Uncertainty in the Measurement of Total Bacterial Count in Candy
The study aims to evaluate the uncertainty of the measurement results of total bacterial count in candy and to improve the reliability of the determination results.The total bacterial count in candy is repeatedly determined 10 times according to GB 4789.2-2022 National Food Safety Standard for Microbiological Examination of Food-Determination of Total Colony Count.The sources of uncertainty are analyzed from the aspects of sample weighing,sampling volume,dilution factor,repeatability determination,and data rounding.The results show that the main factors affecting the uncertainty of this method are repeatability determination and data rounding.
