研究2004-2023年间国内外马铃薯面制品研究领域的趋势与热点.运用CiteSpace软件及数据库平台对中国知网和PubMed数据库收录的314篇中文文献和61篇英文文献的年发文量、载文期刊、作者和关键词进行可视化分析.马铃薯面制品相关研究在近10年前开始发展活跃;《食品工业科技》和《Journal of food science and technology》分别是两个数据库中载文量最多的期刊;任广跃、李淑荣、刘永翔、李宏军、刘颖、木泰华和孙红男等作者是该研究方向的主要贡献者;各种马铃薯面制品的加工工艺以及采用改良剂进行马铃薯面制品品质的改善是该领域的研究热点.国内外相关研究热点基本一致,但研究进展和关注焦点略有差异,中文研究更专注于加工工艺和品质优化,而英文研究则进一步探索马铃薯面制品的功能性.
Visual Analysis of Potato Flour Products Research Using CiteSpace
The objective of this study is to study the trends and hotspots in the field of potato flour products at home and abroad from 2004 to 2023.CiteSpace software and database platform were used to visually analyze the annual publication number,journals,authors and keywords of 314 Chinese and 61 English articles including in CNKI and PubMed databases.The results showed that the research on potato flour products began to develop actively in the past 10 years,and the"Science and Technology of Food Industry"and"Journal offood science and technology"were the journals with the largest number of articles in the two databases.The authors such as REN Guangyue,LI Shurong,LIU Yongxiang,LI Hongjun,LIU Ying,MU Taihua and SUN Hongnan were the main contributors to this research direction.The processing technology of various potato flour products and the use of improvers to improve the quality of potato flour products were the research hotspots in this field.The relevant research hotspots at home and abroad were basically the same,but the research progress and focus were slightly different,the Chinese research focused more on processing technology and quality optimization,while the English research further explored the functionality of potato flour products.
