可可红茶味蛋白棒饱腹感及储存期加速试验研究

以一款添加各类优质蛋白质的高蛋白可可红茶味蛋白棒为研究对象,测试其饱腹感及储存期稳定性.饱腹感采用视觉模拟评分法,以市售白面包为参考食物,对受试者服用可可红茶味蛋白棒的饱感、饥饿感、食物摄入意愿进行评价.结果显示,整体饱腹感变化趋势相似,均在30 min达到饱腹感峰值.女性3个指标评分一致性较好,空腹食用可可红茶味蛋白棒,可维持3.5 h的饱腹感,优于白面包;男性在3个指标的评分有区别,可能与身体质量指数、饮食习惯等因素有关,但都显示在1.5 h和2 h饱腹感优于白面包.储存期稳定性试验采用ASLT法进行保质期加速测试,预测蛋白棒的保质期.在40 ℃和50 ℃,相对湿度75%条件下,以感官指标预测保质期.结果表明,蛋白棒在40 ℃,相对湿度75%条件下储存80 d,在50 ℃相对湿度75%条件下储存25 d,感官评价指标可接受,推断在25 ℃存放条件下,产品保质期约为15个月.
Cocoa Black Tea Flavor Protein Bar Satiety and Storage Period Accelerated Experimental Research
A high protein cocoa black tea-flavored protein bar with various high-quality proteins was used as the research object to test its satiety and shelf stability.The results showed that the overall satiety trend was similar,and the peak of satiety was reached at 30 min.The scores of the three indicators were consistent among women,and eating cocoa black tea flavored protein bars on an empty stomach could maintain a sense of satiety for 3.5 hours,which was better than that of white bread,while the scores of men on the three indicators were different,which may be related to body mass index,eating habits and other factors,but all showed that the feeling of satiety was better than that of white bread at 1.5 hours and 2 hours.The shelf-life stability test used the ASLT method to accelerate the shelf-life test to predict the shelf-life of protein bars.Under the conditions of 40 ℃,50 ℃ and 75%relative humidity,the shelf life was predicted by sensory indicators.The results showed that the sensory evaluation index of protein bars was acceptable when stored at 40 ℃ and 75%relative humidity for 80 days and 50 ℃ and 75%relative humidity for 25 days,and it was inferred that the shelflife of the product was about 15 months under the storage conditions of 25 ℃.
