摘要

"食品化学"作为食品科学与工程专业教学的核心课程,是培养食品专业人才的重要课程."食品化学"课程定位为"理论型+实践型",必须紧密结合理论知识和生产实践,以培养具备坚实理论基础、实践能力且符合行业发展需求的高水平人才.基于产教融合、工学一体的"食品化学"课程教学改革主要做法是:以食品行业发展热点为切入点,在课程中融入基于"产学研合作项目"的科研反哺式教学,采用行业出题、学生答题和教师解题相结合的三位一体教学方法,使得学生在"研习"过程中消化知识,教师在"研授"过程中提升自身能力.

Abstract

"Food Chemistry"is an important part of cultivating professionals in the food industry as it serves as a core course in the major of food science and engineering.The positioning of the"Food Chemistry"curriculum is both theoretical and practical,therefore,teaching this course requires a close integration of theoretical knowledge and production practice to cultivate high-level talents with solid theoretical foundations,practical abilities,and alignment with development needs.The main approach to the teaching reform of"Food Chemistry"based on the integration of industry and education is to incorporate research-backed teaching with"industry-academia collaboration projects"into the curriculum by focusing on hot topics in the food industry.Additionally,a three-in-one teaching method combining industry-generated questions for students to answer and teachers'guidance for problem-solving is employed during the learning process,so that students can absorb knowledge through study while teachers can enhance their own capabilities through instruction.
