The Exploration of PBL-OBE Mixed Teaching Model of"Food Chemistry"Course Guided by the Construction of New Engineering
Under the backdrop of new engineering education initiatives,the discipline of Food Science and Engineering is in urgent need of innovation and reform."Food Chemistry",as a core compulsory course within this discipline,also needs to adapt to this trend of change.Aiming to explore the challenges and issues presenting in the"Food Chemistry"course and propose a hybrid educational model based on Problem-Based Learning(PBL)and Outcome-Based Education(OBE)as a solution strategy.By analyzing the necessity and importance of this hybrid model,we further adjust the educational objectives and content to ensure that the teaching activities better align with the educational requirements of new engineering initiatives.A specific case study on the teaching implementation of enzymatic browning and lipid hydrolysis reactions demonstrates how the hybrid model effectively promotes students'interest in learning,self-learning ability,and capability to solve practical problems,ultimately aiming to enhance teaching quality and effectiveness.This research provides practical guidance and theoretical references for the reform of"Food Chemistry"and related engineering courses.
