Quality Index Analysis of Dried Sea Cucumber Before and After Rehydration
It is to analyze and compare the quality index of dried sea cucumber before and after rehydration,and to provide reference for evaluating the nutritional composition and health risk of edible sea cucumber.About 50 samples of dried sea cucumber sold in the market were collected.The nutritional indexes(protein,salt,sea cucumber polysaccharide and sea cucumber saponin),veterinary drug residues(chloramphenicol,malachite green,furazolidone metabolite,furacillin metabolites,nitrofurantoin metabolite,furantoin metabolite and enrofloxacin)and heavy metal indicators(lead,cadmium,inorganic arsenic,methylmercury)of sea cucumber were determined before and after rehydration.The results showed that the nutritional index content of 50 dry sea cucumber samples was lost after soaking,and the salt loss was the largest;The content of veterinary drug residues in 3 dry sea cucumber samples exceeded the reference value before soaking,but they all reached below the reference value level after soaking.The detected items were furazolidone metabolite,furacilin metabolite and enrofloxacin;No heavy metal indexes were detected before and after rehydration.The quality index of dried sea cucumber was different before and after rehydration.When the dried sea cucumber was soaked to edible state,the content of nutritional index was reduced,but the nutritional value was still very high;The residue of veterinary drugs and heavy metal indicators significantly decreased with the development process,and the health risk was low.
