二十二碳六烯酸(Docosahexaenoic acid,DHA)与二十碳五烯酸(Eicosapentaenoic acid,EPA)等长链多不饱和脂肪酸(Long-chain polyunsaturated fatty acids,LC-PUFAs)具有特殊的生理功能,在预防疾病以及维持人体身心健康上起着重要作用.鱼油是长链多不饱和脂肪酸的传统来源,但研究发现,海洋鱼类并不能合成DHA和EPA,它们只是从海洋食物链中获取和富集DHA和EPA,海洋藻类才是DHA和EPA的合成者.藻油因富含多不饱和脂肪酸,性质很不稳定,容易发生氧化酸败,尤其是在氧气、光照、高温等条件下.为了提高藻油的稳定性和安全性,目前已研究出各种抑制或减缓藻油氧化的方法,并对藻油的生理功能、影响藻油稳定性因素提高藻油产量的措施进行综述,进而为藻油未来的开发利用提供理论依据.
Research Progress on Measures to Increase Algae Oil Yield
Long chain polyunsaturated fatty acids(LC-PUFAs)such as docosahexaenoic acid(DHA)and eicosapentaenoic acid(EPA)have special physiological functions,such as preventing various diseases and maintaining human health.Fish oil is a traditional source of LC-PUFAs,but more and more research has found that marine fish can't synthesize DHA and EPA and they only enrich DHA and EPA from the marine food chain.The marine algae is the synthesizers of DHA and EPA.Since algae oil abounds in PUFAs,it is easy to be oxidized and rancid,especially under conditions such as oxygen,light,and high temperature.In order to improve the stability and edible safety of algae oil,various methods have been developed to inhibit or slow down the oxidation of algae oil.It has been reviewed the physiological functions of algae oil,factors affecting the stability of algal oil,and measures to increase the yield.As a result,it provides some theoretical foundation for the development and utilization of algae oil in the future.
