Indentification of Klebsiella pneumoniae in Cooked Meat of Deli by MALDI-TOF MS
Klebsiella pneumoniae in cooked meat of deli by matrix assisted laser desorption ionization time of flight mass spectrometry(MALDI-TOF MS)was identification,so as to understand the contamination of Klebsiella pneumoniae in cooked meat of deli.Thirty batches of cooked meat products from deli were randomly collected for detection of Klebsiella pneumoniae.The samples were enriched and separated by plate according to SN/T 1962-2007 Method for Detection of Klebsiella in Food.The final results were identified by matrix assisted laser desorption ionization time of flight mass spectrometry(MALDI-TOF MS).The results of VITEK biochemical identification system were compared to compare the consistency of the identification results.The results showed that Klebsiella pneumoniae was detected in most cooked meat,and the identification result of MALDI-TOF MS was consistent with that of VITEK.MALDI-TOF MS method can quickly and efficiently identify Klebsiella pneumoniae in food,and it can be used as a powerful supplement to the detection method of Klebsiella pneumoniae in food.At the same time,the high detection rate of Klebsiella pneumoniae in deli indicates the risk of Klebsiella pneumoniae,which should be paid attention to by relevant departments.
