反向成球法制备口气清新爆珠工艺设计及优化

优化口气清新爆珠制备工艺条件.以外观、膜厚度、粒径作为评价指标,选择海藻酸钠浓度、芯液乳酸钙浓度、成球时间、成球乳酸钙浓度、固化时间、芯液添加量进行单因素试验.基于单因素试验筛选出海藻酸钠浓度、芯液乳酸钙浓度、成球时间、固化时间4个因素,利用Box-Behnken响应面法优化口气清新爆珠的制备工艺条件.结果表明,口气清新爆珠最佳制备工艺为海藻酸钠溶液浓度1.4%,芯液乳酸钙浓度5%,成球时间30 s,成球乳酸钙浓度1%,固化时间15 min,芯液添加量100 μL.该方法制得的爆珠风味清新,爆浆感佳,口感丰富,为口气清新产品制备提供一种新方法.
Optimize the preparation process condition of breath fresh popping beads.Taking appearance,film thickness and particle size as evaluation indexes,select sodium alginate concentration,calcium lactate concentration of core liquid,ball formation time,calcium lactate concentration of ball formation,curing time,and core liquid addition to carry out single-factor experiment.Based on the single-factor experiments,four factors such as sodium alginate concentration,core liquid calcium lactate concentration,balling time and curing time were screened out to optimize the preparation process of breath-freshening popping beads using Box-Behnken response surface method.The experimental results showed that the optimal preparation process of breath-freshening popping beads was as follows:sodium alginate solution concentration of 1.4%,core liquid calcium lactate concentration of 5%,ball formation time of 30 s,ball formation calcium lactate concentration of 1%,curing time of 15 min,and the core liquid addition volume of 100 μL.The popping beads obtained by the method had rounded and flat appearances,homogeneous particle sizes,and good popping sensations with a rich texture.
