Research Progress of Novel Detection Techniques for Endogenous Chemical Pollutants in Foods
Food safety problems caused by food raw materials themselves and endogenous harmful substances produced in food processing have become a research hotspot in recent years.In order to ensure the safety of the people's tongue,the detection technology must also be constantly updated.New detection technologies for common endogenous chemical pollutants in food were reviewed,including nanomaterial-based chromatography and surface-enhanced Raman spectroscopy,new mode immunoassay,molecular imprinting based on functional nanoparticles,fluorescent biosensing detection technology and paper-based sensing detection technology,etc.,and the advantages and disadvantages of various detection technologies were analyzed and summarized.In order to provide theoretical support for the development of new detection technologies for endogenous chemical pollutants in food,it has an important reference significance for ensuring food safety in our country.
