基于CATA方法的长城雪茄与茶饮搭配品吸的香气感官特征和喜好度分析

雪茄有着独特的风格特征,其中香气特征是影响消费者选择的主要因素之一。随着生活水平的提高和品位升级,雪茄也常见于餐饮场景中搭配酒类、茶饮等进行品吸。采用适合项勾选法(check-all-that-apply,CATA)结合九点喜好度对长城雪茄与茶饮搭配品吸时的香气感官特征进行分析。CATA结果表明,6款雪茄搭配品吸时整体香气特征发生改变,并且不同雪茄搭配间的香气特征能被较好区分。喜好度数据表明,在茶饮搭配时,多数雪茄与红茶和黑茶搭配时的喜爱度较高,而黄茶、乌龙茶等茶饮得分较低。运用感官评价试验明确雪茄在搭配茶类时的香气感官特征并洞察消费者对不同搭配的接受度,有助于促进雪茄产品的精准开发和市场营销宣传。
Analysis of Sensory Characteristics on Aroma and Preference for the Great Wall Cigar and Tea Drink Combination based on Check-All-That-Apply
Cigar has unique flavor characteristics and the aroma characteristic as a principal factor has an influence on cigar smoking for consumers.With the improvement of living standards and capacity upgrade of tasting on cigar smoking,cigar smoking is commonly appeared in catering scene paired with alcohol,tea and so on.The aroma sensory characteristics were analyzed when smoking Great Wall cigars with tea based on Check-All-That-Apply and Nine-point preference.As a result,the aroma sensory characteristics of six kinds of cigars when matched with different kinds of tea were changed,which was compared with smoking cigars only.The aroma characteristics among different combinations could be preferably distinguished.As was shown by result of nine-point preference,high scores were got when smoking with black tea or dark tea,while scored lower with yellow tea and oolong tea.The sensory evaluation experiment was comprehensively carried out to identify the aroma characteristics when smoking with different kinds of tea and insight into the different combination acceptance of consumers,which is helpful to promote accurate research or development and marketing promotion of cigar products.
