The Application of Near Infrared Spectrometer for Rapid Detection of Capsaicin Substances
The capsaicin like substances in chili peppers are the main substances that cause pain,and the highly accurate method for detecting such substances is high-performance liquid chromatography.However,this detection method has the problems of tedious sample processing and time-consuming extraction of target substances,and cannot quickly detect the content of capsaicin like substances.This article uses a handheld near-infrared spectrometer to scan the capsaicin like substances in dried chili peppers,obtaining a spectrum of capsaicin like substances.At the same time,combined with high-performance liquid chromatography to detect the capsaicin content results,a capsaicin content determination model is established.The results show that the accuracy of the predicted values of the established Xiao Jiao model is 90%,and the accuracy of the predicted values of the established Yan Jiao model is 95%.The use of the obtained model for the detection of capsaicin like substances in dried chili peppers can quickly obtain the capsaicin like substance content of dried chili peppers,thereby achieving the goal of rapid detection.
