"食品发酵与酿造工艺学"融合"课程思政"的教育实验

摘要
"课程思政"是食品类人才价值塑造的主要途径,但仍处于探索阶段,并缺乏有效的评价手段.以"食品发酵与酿造工艺学"课程为例,在2022和2023年春季学期分别开展2次"课程思政"教育实验,利用"前实验设计"中的"单组前后测设计"方法,以问卷形式评估"课程思政"育人成效.在2022年春季学期,在充分挖掘"思政元素"后以课堂讲授方式进行讲解,问卷中只有36.36%的题目结课后平均分显著性高于开课前平均分,经过"课程思政"教学,学生能收获更多做人做事的道理,更加理性看待社会问题,对传统文化兴趣有所提高,但是对于社会主义制度优势、食品人底线思维、辩证与发展的眼光看问题等方面并没有显著改善.2023年春季学期,引入案例式教学、讨论式教学和翻转课堂等多元教学方法,问卷中90.91%的题目结课后平均分显著高于开课前平均分,说明多元化教学有效提升"课程思政"育人效果,增强了学生的制度自信、文化自信和科技报国信念,有助于他们形成正确的人生观、世界观和价值观.教育实验方法有助于食品专业课教师科学地评估"课程思政"教学质量,并发现"课程思政"育人的一般规律.
Abstract
"Curriculum Ideological and Political"education is the main way to shape the value of food talents,but it is still in the exploratory stage and lacks effective evaluation methods.Taking the course"Food Fermentation and Brewing Technology"as an example and conducted two"Curriculum Ideological and Political"education experiments in the spring semester of2022 and 2023,respectively.Using the"single group pre and post test design"method in the"pre experimental design",evaluate the effectiveness of"Curriculum Ideological and Political"education in the form of a questionnaire.In the spring semester of 2022,after fully exploring the"ideological and political elements",explanations were conducted through classroom teaching.Only 36.36%of the questions in the questionnaire had a significantly higher average score after class than before class.In the spring semester of 2023,the teaching group introduced diversified teaching methods such as case based teaching,discussion based teaching,and flipped classroom based on a 2022 year foundation.The average score of 90.91%of the questions in the questionnaire after class was significantly higher than the average score before class,indicating that diversified teaching effectively improved the educational effect of"Curriculum Ideology and Politics".The educational experimental method helps food professional course teachers to scientifically evaluate the quality of"curriculum ideological and political"teaching and discover the general laws of"Curriculum Ideological and Political"education.
