生物酶法合成植物甾醇酯的研究

采用生物酶法对葵花油与植物甾醇的酯交换反应技术参数和条件进行了探索.采用Novozym 435脂肪酶,催化植物甾醇与油脂的酯交换反应.通过单因素与正交实验,确定了最佳工艺参数:甾醇浓度5%,酶添加量1%,反应时间3h,反应温度100℃,搅拌速度600r/min,在最佳条件下酯交换反应的酯化率达到89.7%.
Study on synthesis of phytosterol esters using enzymatic method
Transesterification was conducted in sunflower oil with phytosterol by Novozym 435 lipase catalyzation.The optimum conditions were obtained by the single factor and orthogonal tests. Phytosterol concentration was 5%,the usage of lipase was 1% ,the reaction time was 3h,the reaction temperature was 100℃,and the stirring speed was 600r/min. The esterification rate was 89.7% under the optimum conditions.
