外源乙烯处理对采后蓝莓感官性状和呼吸代谢的影响

为了探索外源乙烯气体处理对采后蓝莓果实感官性状和呼吸代谢的影响,在1℃条件下,将蓝莓果实在浓度为0.1、1.0、10mL/L的乙烯环境中密闭处理48h后进行贮藏。贮藏期间分析测定了蓝莓果实的感官性状、果肉乙烯含量、鲜果乙烯释放量、呼吸速率、果实硬度、腐烂率以及抗病与衰老相关酶的活性等指标。实验结果表明:与对照相比,不同浓度的乙烯处理均可提高蓝莓果实多酚氧化酶(PPO)、过氧化物酶(POD)、苯丙氨酸解氨酶(PAL)这3种抗病相关酶的活性,但10mL/L的乙烯处理增加了内源乙烯的合成,进而加快了呼吸代谢和衰老的速率,而0.1mL/L和1.0mL/L的乙烯处理提高了蓝莓果实的抗性和贮藏效果。蓝莓果实的亮度差值和感官评定结果间存在着极显著相关性关系(P〈0.01)。
Effects of exogenous ethylene treatments on sensory properties and metabolism of postharvest blueberry fruits
In order to explore the effect of exogenous ethylene treatments on sensory properties and metabolism of postharvest blueberry fruits,blueberry fruits were exposed to concentrations of ethylene of 0.1,1.0 or 10mL/L at 1℃ for 48h and then transferred to air condition for storage.During the period of storage,fruit sensory properties,ethylene content in pulp,endogenous ethylene production of fresh fruit,respiration rate,fruit firmness,rot rate and the activities of some enzymes that related to disease resistance and senescence were analyzed.The results indicated that compared with control,three kinds of ethylene treatments increased the activities of polyphenol oxidase(PPO),peroxidase(POD)and phenylalnine ammonialyase(PAL).Nevertheless,10mL/L ethylene treatment increased the biosynthesis of endogenous ethylene and accelerated the metabolism rate and senescence process,while 0.1mL/L and 1.0mL/L ethylene treatments promoted the disease resistance ability and storability of blueberry fruits.The lightness discrepancy before and after removal of wax was significantly related with the result of sensory evaluation(P0.01).
