热泵干燥和远红外干燥干制怀山药溶出性研究

干制怀山药的溶出性决定其被冲泡时的营养利用率.以干制怀山药片的溶出性为指标,通过3因素3水平正交试验确定热泵干燥和远红外干燥的较优参数组合.结果表明,热泵干燥的较优参数组合为干燥温度70℃、风速4 m/s、怀山药切片厚度2 mm;远红外干燥的较优参数组合是辐射温度190℃、辐射距离8 cm、怀山药切片厚度2 mm;与热泵干燥相比,远红外干燥制得的怀山药片溶出性更强;不管采用热泵干燥还是远红外干燥,怀山药切片厚度对指标的影响都最显著.试验结果为怀山药片的干燥工艺提供理论依据.
The solubleness research of Chinese yam under heat pump drying and far-infrared drying
The solubleness of dried Chinese yam determined the nutrient utilization rate once it is drinking after brewing. In this paper, the solubleness of dried Chinese yam was used as index, better combination of parameters of heat pump drying and far-infrared drying has been determined through three-factorthree-level orthogonal test. The research results showed that better combination of parameters of heat pump drying is drying temperature 70 ℃, air velocity 4 m/s, the thickness of Chinese yam 2 mm and that better combination of parameters of far-infrared drying is radiation temperature 190 ℃, radiation distance 8 cm, the thickness of Chinese yam 2 mm. Compared with heat pump drying, far-infrared drying make dried Chinese yam has bigger solubleness. The research results indicated that the thickness of Chinese yam have the most significant influence on the index both under heat pump drying and far-infrared drying. The experimental results of this paper could provide theoretical foundation for drying process of Chinese yam slices.
