Enzymatic Hydrolysis and Anti-Inflammatory Activity of Mytilus Edulis
Objective:The enzymatic hydrolysis preparation process of Mytilus edulis was screen to determine the best conditions combined with anti-inflammatory index.Methods:The anti-inflammatory effect was evaluated by the model of stimulating the RAW264.7 cells with lipopolysaccharide(LPS).The enzymatic hydrolysis yield and inhibition rate of NO were used as indexes,the best protease and ultrafiltration fractions from six proteases(bromelain,alkaline protease,papain,pepsin,trypsin and neutral protease)were selected,and the best scheme was investigated through an orthogonal test.Results:The trypsin hydrolysates with a molecular weight less than 5 ku had the best anti-inflammatory effect.Optimum conditions were as follows:material liquid ratio 1∶15(w∶V),enzyme dosage 1.5%,enzymatic time 3 h.Under these conditions,the enzymatic hydrolysis yield was 13.54%(based on fresh weight),and the inhibition rate of NO was 99.17%.Conclusion:The Mytilus edulis enzymatic hydrolysates had obvious anti-inflammatory effect and the process is reasonable and feasible for industrial production.
