Preparation and Stability Study of Nanoemulsion of Gardenia Oil/Rice Bran Protein by High-Pressure Microfluidization Process
In order to prepare the nanoemulsion of gardenia oil,using gardenia oil and rice bran protein as raw materials,the high-pressure microfluidization(HPM)was employed for preparation nanoemulsion of gardenia oil/rice bran protein.The effects of pressure,rice bran protein dosage,gardenia oil dosage and treat times on average particle size of nanoemulsion were studied.Based on this,Box-Behnken design of experiments was adopted,and the average particle size of nanoemulsion was taken as the response value for response surface test to determine the optimal process parameters and study the stability of the emulsion.The results shown the optimum preparation conditions were as follows:pressure 100 MPa,rice bran protein dosage 1.8%and gardenia oil dosage 9.8%and treat 2 times.Under these conditions,the average particle size was 279.9 nm.The Zeta potential of nanoemulsion exceeded 30 mV at 50-90 ℃,pH6-8,and storage time of 28 days,respectively,and it has good stability.HPM was a suitable method for prepararing gardenia oil/rice bran protein nanoemulsion.
