Progress on the Application of Glutamine Transaminase in Fermented Dairy Products
Transglutaminase(TGase)is a natural enzyme preparation that can catalyze the formation of isopeptide bonds between protein and modify protein.The enzyme can catalyze the cross-linking,deamidation and glycosylation of protein,and has great application potential in improving the viscosity,water holding capacity,texture characteristics and gel characteristics of fermented dairy products.In this paper,the mechanism,origin and research progress of TGase in improving the quality of fermented dairy products at home and abroad in recent years were discussed,in order to provide an effective reference for the industrial application of TGase and the quality improvement of fermented milk.
