Effect of Sodium Hydrosulfite Addition on Quality Indexes of Yuba
During the production of yuba,the effects of 0%-0.12%sodium hydrosulfite on the film forming rate,yield,tensile strength,elongation at break,color of yuba were determined.The appropriate addition amount of sodium hydrosulfite was got according to the residual amount of sulfur dioxide in the yuba.The results showed that the yield,film forming rate and tensile strength of the yuba increased first and then decreased,the elongation at break decreased and L*value increased with the increase of sodium hydrosulfite addition.When 0.02%-0.06%sodium hydrosulfite was added,the film forming rate,yield,tensile strength and L*value of yuba could be improved.When the addition is 0.02%,the yield and film forming rate reached the maximum.When the addition is 0.04%,the tensile strength reached the maximum,the elongation at break of yuba was decreased when sodium hydrosulfite was added.The elongation at break of yuba was acceptable at 0.02%-0.04%addition,when 0.04%-0.06%sodium hydrosulfite was added,the color of yuba was good.There was a safety risk of excessive sodium hydrosulfite in the later period of yuba processing when 0.06%sodium hydrosulfite was added.Considering the color,yield,film forming rate,mechanical properties and safety of the film,the appropriate addition was 0.04%.The elongation at break of yuba was more affected by the residual amount of sulfur dioxide in the soybean milk.
