目的:基于顶空固相微萃取气相色谱法建立白酒中6种醛类物质的测定方法,并探究其在3种不同香型白酒中的含量分布情况.方法:吸取10 mL酒样,加入2 g氯化钠超声混匀后,顶空进样分析.结果:6种醛类物质在10~300 mg/L范围内线性关系良好,方法检出限为0.028~0.390 mg/L,定量限为0.092~0.980 mg/L,平均回收率为81.3%~118.9%,相对标准偏差为1.9%~8.6%.除丁烯醛外,3种香型白酒样品中均不同程度检出异丁醛、糠醛、正丁醛、异戊醛,检出率为17%~100%,检出值为0.24~49 mg/L.清香型白酒中检出丙烯醛,检出率为21%,检出值为0.46~3.52 mg/L.结论:该方法适用于白酒中6种醛类物质的测定.异丁醛、糠醛、正丁醛、异戊醛的检出率及含量与白酒的香型有一定关系.
Determination of Six Aldehyde Compounds in Chinese Spirit by Headspace Solid-Phase Microextraction-Gas Chromatography
Objective:Based on headspace solid-phase microextraction gas chromatography(HS-SPME-GC),a method for the determination of six aldehyde compounds in Chinese spirit was established,and their content distribution in three different flavor Chinese spirit was explored.Methods:Take 10 mL of the liquor sample,add 2 g of sodium chloride and ultrasonic to mix well,then perform headspace injection analysis.Results:The linear relationship between six aldehyde compounds exhibited a good within the range of 10-300 mg/L,the limit of detection(LOD)was 0.028-0.390 mg/L,the limit of quantification(LOQ)was 0.092-0.980 mg/L,the average recovery rate was 81.3%-118.9%,and the relative standard deviation(RSD)was 1.9%-8.6%.Except butyraldehyde,isobutyraldehyde,furfural,n-butyraldehyde and isovaleraldehyde were detected in different degrees in the samples of three types of flavor Chinese spirit,with the detection rate of 17%-100%and the detection value of 0.24-49 mg/L,acrolein was detected in mild aromatic Chinese spirit,with the detection rate of 21%,and the detection value of 0.46-3.52 mg/L.Conclusion:The method can be used for the determination of six aldehyde compounds in Chinese spirit.The detection rate and content of isobutyraldehyde,furfural,n-butyraldehyde and isovaleraldehyde had a certain relationship with to the flavor type of Chinese spirit.
