Lactoferrin and the Building of Early Infant Immunity
Lactoferrin is an extremely important functional protein in human milk,which plays a vital role in the health development of infants.This paper reviews the biological characteristics of lactoferrin,including its structure,the differences in its content between human milk and infant formula,and the effects of thermal processing on its structure.This paper also focuses on the connection of lactoferrin and the building of early infant immunity,especially the anti-bacterial,anti-viral,and promoted gastrointestinal health function.It provides theoretical references for the development of lactoferrin-supplemented infant foods and related functional foods.
