Rapeseed is the seed of oil rape,which is rich in fat,protein,vitamin and calcium and other nutrient,which have good health care and disease resistance activities.The processing of rapeseed mainly focuses on rapeseed oil,rapeseed meal and rapeseed skin.The content of rapeseed oil accounts for about 40％of rapeseed.Rapeseed oil can be used as edible oil and industrial diesel oil.Rapeseed meal was used as feed and fertilizer usually,and to produce fermented food.Besides,proteins,polypeptides,polysaccharides,polyphenols,and plant corrosion inhibitors were also extracted from rapeseed meal.Rapeseed skin can be used to extract proanthocyanidins,produce degradable tableware,and produce edible fungi.At present,the deep processing of rapeseed is obviously insufficient,the product categories are relatively single,and with low value-added.Therefore,it is of great significance to maximize the utilization of rapeseed oil,protein and other resources.In this paper,the processing status and shortcomings of rapeseed oil,rapeseed meal and rapeseed skin are summarized.Hoping this review provide reference for the preparation and industrialization development of rapeseed products.
