Optimization of Solid-State Fermentation Process for Producing Soluble Dietary Fiber from Zanthoxylum armatum DC.Seed Meal and Its Immune Activity
Pleurotus citrinopileatus was used for solid-state fermentation of Zanthoxylum armatum DC.seed meal to produce soluble dietary fiber with high immune activity,thereby the utilization value of Zanthoxylum armatum DC.sideline products was improved.The optimal process conditions for the preparation of soluble dietary fiber were obtained through single factor test and response surface method.The inoculation amount was 18%,fermentation temperature was 26.5 ℃,and fermentation time was 11 days.Under these conditions,the content of soluble dietary fiber in Zanthoxylum armatum DC.seed meal reached(10.26±0.98)%.The immune activity of soluble dietary fiber before and after fermantation was compared by constructing an immunodeficient animal model.After fermentation,the soluble dietary fiber of Zanthoxylum armatum DC.seed meal could enhance the activity of lymphocytes and phagocytes in mice by enhancing ear swelling rate(39.60±1.50)%and phagocytic function of macrophages(4.56±0.30)%,with significant differences compared to the model group(P<0.01).The immune function of mice was enhanced by improving spleen damage,the spleen index and tissue morphology were significantly improved,the spleen index was up to(3.48±0.16)%.The results showed that solid-state fermentation of Pleurotus citrinopileatus can effectively increase the soluble dietary fiber content of Zanthoxylum armatum DC.seed meal and had high immune activity.This study provides certain data support for the fermentation of agricultural and sideline products by edible fungi,and has theoretical and practical value for further developing soluble dietary fiber resources.
