富硒乳酸菌的筛选及富硒工艺研究

以常用发酵乳制品的菌种为供试菌株,通过富硒发酵试验,对副干酪乳杆菌、动物双歧杆菌、植物乳杆菌、嗜热链球菌进行富硒筛选试验,筛选出高富硒菌种.用响应面试验对最优富硒菌株进行富硒工艺优化,以期得到富硒菌种的最佳富硒工艺.结果表明:副干酪乳杆菌的富硒能力优于其他3种乳酸菌;副干酪乳杆菌的最佳富硒工艺为菌种硒含量5844.22 mg/kg,加硒量为2.07 mg/kg,加硒时间5.76 h,最终富硒益生菌产品得率为333.34 mg/kg,硒含量为14002.96 mg/kg.通过检验试验,结果表明此优化工艺参数准确可靠.
Screening of Selenium-Rich Lactic Acid Bacteria and Research on Selenium-Rich Process
The strains of commonly used fermented dairy products were used as the donor strains,and the selenium-rich strains were screened out by selenium-rich fermentation test from Lactobacillus paracasei,Bifidobacterium animalis,Lactobacillus plantarum,Streptococcus thermopiles.In addition,the response surface test was used to optimize the selenium-rich process of the optimal selenium-rich strains,in order to obtain the optimal selenium-rich process.According to the results,the selenium-rich ability of Lactobacillus paracasei was better than that of the other three lactic acid bacteria.The optimal selenium-rich process of Lactobacillus paracasei was as follows:the selenium content of the strain was 5844.22 mg/kg,the selenium addition amount was 2.07 mg/kg,and the selenium addition time was 5.76 h.Based on the above conditions,the yield of the final selenium-rich probiotic product was 333.34 mg/kg,and the selenium content was 14002.96 mg/kg.The validation test proved that the optimized process parameters are accurate and reliable.
