Research Progress on Nutrients,Anti-Nutrition Factors,Exploitation and Utilization in Winged Bean
Winged bean is a kind of rare herbaceous plant with rich nutrients and high medicinal value.It is also the root crop with the most complete protein types and the highest content in the world today.It has the same high quality vegetable protein as soy.And it has anti-fatigue,anti-liver damage,anti-oxidation,anti-wrinkle and other effects.In addition,the saponification value and iodine value of winged bean oil are similar to that of soybean oil,and the refined winged bean oil is suitable for consumption,its chemical composition and nutritional value are very close to that of soybean oil,and it has the potential to become a new oil resource for development and wide application prospects.It is of great significance to study the nutritional and medicinal value of winged bean in order to improve the utilization rate of food resources and develop the products of winged bean in the future.In this paper,the research status of nutrients and anti-nutrition factors of winged bean in recent years was combined,and the development and utilization of winged bean in food,health care products,feed and other fields was summarized,the aim is to provie theoretical basis for the in-depth development and utilization of winged bean resources.
