Proteomics is the scientific area of characterizing the proteomes.The proteomes is the co-result of genome,environment and processing conditions.It can be used as powerful tool to study many factors' influence on meat quality synchronously.The aim of this review is to introduce the development of the tools for proteomics,and to summarize the achievement in proteomic's using in study of the relationship between genetic variations and meat quality,enviroment and meat quality,processing condiction and meat quality,structural or enzyme protein and meat quality..The prospects of proteomics' use in exploring meat quality will be discussed.
