Structure and variation mechanism of microbial community in Chinese sauerkraut fermentation: a review
In this article,we reviewed recent researches on the microbial community in Chinese sauerkraut fermentation,with emphasis on the composition and variation of microbial community in Paocai and influence of the outer factors on the microbial community in Paocai and how to use these factors in Paocai production.Further,we made a perspective on the application of metagenomics and systems biology approaches on the mechanism of microbial community in Paocai fermentation.
