The research advance of exopolysaccharides from lactic acid bacteria and its application in food industry
Exopolysaccharide (EPS),including homopolysaccharide (HoPS) and heteropolysaccharide (HePS),is a class of metabolite of lactic acid bacteria.EPS is widely used in food industry as viscofying agent,stabilizing agent and emulsifying agent.In recent years,EPS has attracted much public attention because of its potent activities such as antioxidation,antitumor and antibacterial.In this paper,types and structures of EPS,factors that influence the yield of EPS,methods for EPS identification and extraction,bioactivities and the applications of EPS in food industry were summarized.
