Advances in contamination and control of mycotoxins in meat products
Mycotoxins play an important role in food safety and greatly threaten both animal and human health.In this overview,the source and hazard of common mycotoxins,including aflatoxins,ochratoxins,deoxynivanol,zearalenone,patulin and citrinin,existing in meat products were briefly introduced.Both their contamination and control methods in meat products were prominently presented.Meanwhile,the direction of future research on common mycotoxins in meat products was put forward.
