Saccharomyces cerevisiae Et 20 is able to tolerate 20% ethanol presence through acclimatization.The effects of fatty acids,amino acids,inorganic ions,trehalose and inositol addition at various concentration on ethanol tolerance of Et 20 were studied.Results showed that all of the additives increased ethanol tolerance and improved fermentation performance.The order of enhancing effect on ethanol tolerance was:fatty acids > amino acids > inorganic salt > trehalose > inositol.While the order of enhancing effect on fermentative performance was:trehalose > fatty acids > amino acids > inorganic ions > inositol.Under the ethanol stress of 10%,addition of trehalose improved fermentation efficiency by 39.04%.However,the effect of trehalose on ethanol tolerance exhibited no superiority,which only improved by 15.81% of biomass.The impact of stearic acid on fermentation efficiency was 26.13%,second to trehalose.However,it outperformed trehalose on enhancing ethanol tolerance.It improved microorganism biomass by 40%,under ethanol stress of 10%.This study laid groundwork for further improving ethanol tolerance and fermentation performance of Saccharomyces cerevisiae.
