随着生活水平的提高,人们对水产海鲜等食品的需求 日益增长,因此由水产品加工产生的鱼皮等副产物逐渐增多,如何正确处理此类副产物并实现经济效益最大化成为企业面临的一大难题.从鱼皮中提取制备的胶原蛋白、明胶不仅具有降压、抗菌、抗氧化等药用价值,而且可以提高鱼皮等副产物的综合利用度以及经济价值.该文主要介绍了鱼皮中胶原蛋白的药用价值研究,并对胶原蛋白的处理方法进行概述,为后续鱼皮相关研究提供理论依据.
Research progress on medicinal value of collagen in fish skin
With the improvement of living standards,people's demand for aquatic seafood and other food is growing day by day,so the fish skin and other by-products produced by the processing of aquatic products are gradually increasing.How to correctly deal with such by-products and maximize economic benefits has become a big problem faced by enterprises.Collagen and gelatin extracted from fish skin not only have antihypertensive,antibacterial,antioxidant,and other medicinal values but also can improve the comprehensive utiliza-tion and economic value of fish skin and other by-products.This article mainly introduced the collagen in fish skin and its medicinal value and summarized the treatment methods of collagen to provide a theoretical basis for the subsequent research on fish skin.
