脉冲电场预处理提取甜菜糖的研究进展

甜菜是我国制得蔗糖的主要原料之一,而甜菜制糖的传统热水提取法存在提取时间长、能耗高、提取率低等问题,不符合绿色环保的可持续发展理念。脉冲电场(pulsed electric field,PEF)辅助提取被公认为一种可靠的提取手段,具有短时、非热、高效等特点,用于甜菜制糖已有不少研究。该文概述国内外使用PEF预处理提取甜菜糖的相关应用,介绍其辅助提取的作用机制和影响提取率的主要因素,并对PEF提取应用做分析与展望,以期为实际生产提供理论指导。
Research progress on extraction of beet sugar by pulsed electric field pretreated
Sugar beet is one of the primary raw materials for sugar production in China,yet traditional sugar beet extraction methods rely on hot water extraction.This method is plagued by issues such as long extraction times,high energy consumption,low extraction rates,and poor sugar product quality,which do not align with the principles of green and sustainable development.Pulsed electric field(PEF)assisted extraction technology is recognized as a reliable strategy of extraction,characterized by instantaneous high field strength,high frequency with non-thermal effects,and superior efficiency.There have been numerous studies utilizing PEF in sugar beet processing.Therefore,this manuscript provides an overview of domestic and international applications of PEF pretreatment for sugar beet extraction.Furthermore,this study elucidates the mechanism of its assisted extraction,identifies key factors influencing extraction rates,and pros-pects the application of PEF extraction,aiming to provide theoretical guidance for the practical production of sugar from sugar beet.
