Analysis on the Nutrient Ingredients of the Amphicarpaea edgeworthii Benth
According to the National Dietary and Nutrient Standards, the entire components of Amphicarpaea edgeworthii Benth. were analyzed using the methods of national standards rules. The results showed that the protein content reached to 21.9 g/100 g, the fat 1.22%, the carbohydrates 65.0%,the dietary fiber 18.7 %, VB1 0.026 mg/g, VB2 0.074 mg/g, VB6 0.225 mg/g. And the plant contains mineral elements such as Zn,Fe,Mg,K, Ca. In conclusion,the bean from A.edgeworthii Benth.has potential value of diery and healthy, worth to cultivate and popularize.
