Study on Nutrients Analysisand Anti-oxidative Activity of Wild and Cultivated Blueberry
In this thesis, with the wild blueberry and cultivated blueberries as the research object, the content of total phenols, total anthocyanins and vitamin C, were analyzed by Folin-Ciocalteu method, pH-differential method and high performance liquid chromatography (HPLC)method, respectively. Moreover, the DPPH free radical and superoxide anion free radical of two kinds of blueberries are studied. The results indicated that:1) The content of protein and total phenol of two kind of blueberries are all very high , the content of protein and total phenol of wild blueberry were 5.64 mg/g and 5.44 mg/g respectively , and the content of protein and total phenol of cultivated blueberries were 6.42 mg/g and 5.79 mg/g respectively. The protein and total phenol content of cultivated blueberry were slightly higher than that of wild blueberries; total acid and anthocyanin content were lower than that of wild blueberries;But the total sugar content of cultivated blueberry was 21.3%higher than that of wild blueberry 12.2%. 2)DPPH free radical rate of two kinds of blueberry extract were very close. Superoxide anion free radical clearance rate of the wild blueberry rate was higher than the cultivated blueberry by 7.86%.
